Recipe – Chocolate Harmony Cake
Sponge Layers
(Prepare three separate layers)
- 3 eggs
- 8 tablespoons sugar
- 4 tablespoons oil
- 2 tablespoons milk
- 4 tablespoons cocoa powder
- 4 tablespoons plain flour
- ½ packet baking powder
Chocolate Filling
- 400 g white chocolate
- 300 g dark chocolate
- 1 liter whipping cream
- 200 g margarine
Syrup
- 600 ml water
- 8 tablespoons sugar
- 200 ml warm milk
- 5 tablespoons cocoa powder
Preparation
Step 1 – Bake the sponge layers
Preheat the oven to 180°C. Prepare a baking pan (approximately 28 cm in diameter) by lining it with baking paper and lightly greasing it with margarine.
In a bowl sift together the flour, cocoa powder and baking powder.
In another bowl beat the eggs and sugar until the mixture becomes light and airy. Add the oil and mix briefly.
Gradually add the dry ingredients and milk alternately, mixing gently at low speed or by hand until the batter becomes smooth.
Pour the mixture into the prepared pan and bake for 20–25 minutes.
Repeat the same process to prepare two additional sponge layers, making three layers in total.
Step 2 – Prepare the chocolate filling
Break the white and dark chocolate into smaller pieces and place them in a saucepan.
Pour the whipping cream over the chocolate and heat the mixture over low heat, stirring constantly until the chocolate melts completely.
Add the margarine and mix until everything becomes smooth and evenly combined.
Allow the filling to cool and thicken slightly before assembling the cake.
Step 3 – Prepare the syrup
In a small pot bring the water and sugar to a boil and cook for about 4–5 minutes.
Meanwhile, dissolve the cocoa powder in the warm milk. Add this mixture to the syrup and cook for another 2–3 minutes while stirring.
Allow the syrup to cool slightly.
Assembling the Cake
Arrange the cake layers in the following order:
- Sponge layer
- Cocoa syrup
- Chocolate filling
Repeat the same process with the remaining layers until all ingredients are used.
It is best to apply the syrup gradually, allowing each layer to absorb it evenly. Divide the syrup into three portions so each sponge layer receives the same amount.
If possible, assemble the cake in a springform ring, which helps keep the layers neat.
After assembling, place the cake in the refrigerator and allow it to rest overnight so the flavors blend together perfectly.
Decoration
Decorate the cake according to your preference. Chocolate shavings, whipped cream or fresh fruit are all excellent options.
