Tufahije – Traditional Bosnian Apple Dessert

Some desserts are more than just something sweet after a meal. Instead, they represent tradition, memories and the warmth of family gatherings. Tufahije are a perfect example of such a dessert. Although this recipe originally comes from Ottoman cuisine, it later became deeply rooted in Bosnian culinary tradition. Over time, it developed its own recognizable appearance and preparation style.

Tufahije – Traditional Bosnian Apple Dessert

At first glance, tufahije may seem simple. However, their flavor is surprisingly rich and balanced. Soft apples are gently cooked in a light sugar syrup and then filled with a fragrant walnut mixture. Finally, they are topped with whipped cream, which adds a creamy finish to the dessert.

Traditionally, tufahije were prepared for celebrations, holidays or special family visits. Today, however, they can easily be enjoyed any day of the week. In addition, their preparation is not complicated, which makes them an excellent choice when you want to serve something elegant yet homemade.


Ingredients

For the apples

  • 6 large green apples (Granny Smith or another slightly sour variety)
  • 150 g ground walnuts
  • 3 tablespoons sugar
  • 1 packet vanilla sugar
  • 1 lemon (juice and grated zest)
  • 500 ml water
  • 200 g sugar (for syrup)

For decoration

  • Whipped cream or sweet whipped cream
  • Optional: chopped walnuts, grated chocolate or a cherry

Preparation

Step 1: Prepare the apples

First, peel the apples carefully. Then remove the core from each apple while keeping the fruit whole.

Meanwhile, prepare the syrup. In a large pot combine water, sugar, lemon juice and lemon zest. Bring the mixture to a boil.

Once the syrup starts boiling, gently add the apples. Cook them for about 8–10 minutes. During this time the apples should soften slightly, yet they must still keep their shape.

Afterward, carefully remove the apples from the syrup and allow them to cool.


Step 2: Prepare the walnut filling

Next, place the ground walnuts, sugar and vanilla sugar in a bowl. Then add a small amount of the warm syrup from the pot. As a result, the mixture will become slightly moist and easier to fill into the apples.


Step 3: Fill the apples

Once the apples have cooled, carefully fill the center of each apple with the prepared walnut mixture. At this stage the dessert already starts to take its final form.


Step 4: Decorate

Finally, add a generous swirl of whipped cream on top of every apple.

If desired, you can also decorate them with chopped walnuts, grated chocolate or a cherry. Not only does this add flavor, but it also makes the dessert visually more appealing.


Serving

For the best taste, tufahije should be well chilled before serving. Therefore, place them in the refrigerator for several hours. Ideally, they should rest overnight so the flavors can fully develop.

When serving, place each apple in a dessert bowl or glass. Additionally, pour a little of the sweet syrup over the top for extra moisture and flavor.
