Ingredients

  • 700 g chicken breast, cut into bite-size cubes
  • 30 ml olive oil
  • 4–5 garlic cloves, finely crushed
  • 100 g sun-dried tomatoes in oil, sliced
  • 2 teaspoons oregano
  • 2 teaspoons sweet paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 200 g orzo pasta
  • 650 ml chicken broth (or water)
  • 200 ml cooking cream
  • 100 g fresh spinach
  • 75 g grated parmesan cheese

Preparation

Heat olive oil in a large deep skillet over medium heat. Add the chicken pieces and cook them for about 2–3 minutes, just until they start to turn golden.

Next, add the crushed garlic, sliced sun-dried tomatoes, oregano, paprika, salt and pepper. Stir everything together and continue cooking for another 3–4 minutes so the ingredients release their aroma and flavor.

Add the orzo pasta to the pan and pour in the chicken broth. Stir well to combine all the ingredients. Lower the heat slightly, cover the pan and let the mixture cook for about 12 minutes, stirring occasionally to prevent sticking.

Once the orzo becomes tender, pour in the cooking cream and add the fresh spinach. Stir gently for about one more minute until the spinach softens.

Finally, mix in the grated parmesan cheese, allowing it to melt into the creamy sauce.

Remove the pan from the heat, serve the dish warm and enjoy a comforting meal full of Mediterranean flavor.
